Jo lives is Sydney's Northern Beaches and is a two time Olympic Kayaker.

Jo has always balanced work/study while an elite athlere - she studied nursing, and then paramedics throughout her career. Since 2016 Jo worked part time with the NSW Ambulance in tandem with her preparations for the Olympic Games, then took on full time work after the postponement of the Tokyo 2020 Olympic Games.

Jo has a passion for sweets and cakes, with many requests from friends and family to bake special occasion cakes. This passion turned into a side hustle after the delay of the 2020 Olympic Games, where she created Elite Cake Co.

 

Elite Cake Co. sells homemade sweets baked by Jo herself. She offers an array of cakes, cupcakes, desserts and cookies that can be customised to the customer for any occassion. 

 

Since returning from the Tokyo 2020 Olympics, Jo has since retired from paddling and is now focusing on growing Elite Cake Co. while working full time as a paramedic.
